Adjust rack to middle position and preheat oven to 425 degrees. **Wash and dry all produce.** Halve @green bell pepper{4}unit lengthwise; remove stems and seeds. Trim, peel, and grate @carrot{12%oz} on a box grater. Trim and thinly slice @scallions{4}unit, separating white parts from green tops. Halve @gouda cheese{4%slice} slices.
